Fast Lane Dream Dinners Classics: Delicious pork tenderloin served over roasted heirloom potatoes and all topped with an apricot compound butter.
Thaw in refrigerator.
1.Preheat oven to 425°F. Heat a sauté pan over med-high heat on stovetop sprayed with nonstick cooking spray. Spray two foil-lined baking sheets with nonstick cooking spray. 2.Sear tenderloin in preheated pan for 3-5 min. per side. Transfer to foil-lined baking sheet and place in oven. 3.Evenly spread potatoes in a single layer on second baking sheet. Toss with 1 Tbsp. of olive oil and salt and pepper to taste. 4.Bake both tenderloin and potatoes in oven for 25-30 min. Halfway through, remove potatoes from oven and stir and return to oven for remaining cook time. 5.Meanwhile, massage apricot butter to combine. .Remove tenderloin from oven (internal temp. of 145°F) and let rest 10 min. while potatoes finish roasting. 7.Slice tenderloin into 1/4" slices, place on top of roasted potatoes. Top tenderloin with apricot butter and serve.
