1.In large skillet over med-high heat add 2 Tbsp. olive oil, cook chicken mixture and stir to break apart, 5-7 min.
2.Stir in seasoned tomato mixture to blend.
3.Stir in orzo and bring to boil. Reduce heat to low, cover and simmer 15-20 min. until orzo is tender. If orzo sauce evaporates add extra water (1/4-1/2 cup) to desired consistency.
4.Sprinkle with cheese and serve.
