1.To prepare rice: In sauce pan, add rice and 1 1/8 cups water. Bring to boil, stir once, cover and cook on low heat for 20-25 min. Fluff with fork.
2.Meanwhile, using tongs, remove chicken from marinade. Cut chicken breast with kitchen scissors into bite-size pieces and coat with breadcrumbs by firmly pressing breadcrumbs into chicken.
3.Heat 1-2 Tbsp. olive oil in large sauté pan over med heat. Brown chicken 3-4 min per side.
4.Pour sauce over browned chicken, cover with lid, simmer over med-low heat for 8-10 min. (internal temp. 165°F), basting regularly to coat the chicken thoroughly.
5.Remove chicken from pan and drizzle sauce over. Serve over rice.
