Sticky Ginger Turkey Meatballs over Fried Rice

Medium Instructions

Thaw in refrigerator.
1.In a sauce pot, add rice and 1 1/8 cup water. Bring to boil, stir once, cover and cook on low heat for 20-25 min. Fluff with fork. Evenly spread cooked rice on a plate and set aside to cool.
2.Meanwhile, preheat oven to 400°F. Place turkey mixture into mixing bowl, stirring to combine. Firmly roll mixture into 12-14 golf ball-sized meatballs.
3.Place meatballs on a foil lined baking sheet and cook for 15-20 min. (internal temp 155°F).
4.Meanwhile, place ginger glaze (with sesame seeds) in sauce pot used for rice and cook on med-high until sauce boils, reduce heat and simmer for 10 min.
5.Preheat a large sauté pan over med-high heat and add 1 Tbsp olive oil. Once heated, place cooked rice in pan and sauté for 3-4 min. or until rice browns slightly. Immediately, add sauce with veggies to rice and stir to combine, cook for 3-4 min.
6.To serve: Toss meatballs with ginger glaze and serve over fried rice.
