New Sunday Suppers: Tender chicken breasts served in a stew of white beans and kielbasa sausage with herbed breadcrumbs.
Thaw in refrigerator.
1.Preheat oven to 350°F. 2.Heat a dutch oven or oven-safe pot over med-high heat. Meanwhile, season chicken breasts with salt and pepper. Add 1 Tbsp. of oil to heated pot and sear chicken breasts. Cook for 1-2 min. per side to brown but not fully cook through.3.Remove chicken from pot and set aside. Drain any liquid from sausage bag and add mixture to pot. Sauté for 5 min. until sausage is brown and vegetables softened. 4.Add bean base to pot and stir to combine. Bring mixture to a simmer and cook for an additional 5 min.5.Add seared chicken breasts back to pot and partially submerge in bean and sausages. Cover pot with lid and place in oven and cook for 30 min. 6.Remove pot from oven and evenly sprinkle herbed breadcrumbs over chicken and bean mixture, spray breadcrumbs with oil spray and place back in oven. Turn broiler to LOW and allow the breadcrumbs to toast and become golden brown about 3-5 min. 7.Serve chicken and bean mixture in shallow bowls.
