Sesame Crusted Mahi Mahi with Soy Ginger Butter over Rice

Medium Instructions

Thaw in refrigerator
1.Preheat oven to 325°F.
2.In sauce pot, add rice and 1 1/8 cups water. Bring to boil, stir once, cover and cook on low heat for 20-25 min. Fluff with fork.
3.Meanwhile, remove fillets from bag and pat each side of mahi mahi dry with paper towel. Place fillets on plate and drizzle with olive oil and season with salt and pepper to taste.
4.Evenly coat each side of fillets with sesame seeds, firmly pressing seeds to coat.
5.Heat a medium sized sauté pan over med-high heat, add 1 Tbsp of oil. When pan is hot, add sesame crusted mahi mahi to pan and sear for 1-2 min. per side. The sesame seeds should be golden brown and crispy. Place seared fillets on foil-lined baking sheet and allow to finish cooking in the oven for 4-6 min. Fillets should be flaky and cooked through (internal temp. 145°F).
6.Add soy ginger butter to small pot and heat on med-low until melted and stir to combine.
7.To serve, spoon warm soy ginger butter over mahi mahi and serve over rice.

Large Instructions
